Bauman College supports a variety of community nutrition education courses and partnerships offered via our Community Outreach Department and the Nutrition Skills Initiative

The Nutrition Skills Initiative: Community programs to teach people of all ages and backgrounds practical nutrition information and skills to procure and prepare delicious whole foods. The Initiative links Bauman College students and graduates with committed Community Partners to bring Eating for Health™ to underserved segments of our community.

The Nutrition Skills Initiative

The Nutrition Skills Initiativeis structured on the universal principal that everyone has to, and most often, loves to eat. Therefore, our approach is to introduce people to local, seasonal and fresh healthy food, and avoid narrow dogmatic opinion and food ideologies. We believe that collaboration based on voluntary sharing from partners bringing differing resources to the table to overcome food scarcity and the unequal distribution of food and health resources. The Bauman Eating for Health™ approach is open, inclusive and encourages independent, critical thinking. Most importantly, we teach people to move from convenience to making conscious food and lifestyle decisions that can be health and life changing. Community Partners provide support a low-income audience that needs education and services. Food Pantries, farms, CSAs have fresh fruits and vegetables to distribute. Bauman College brings Nutrition Consultants and Natural Chefs to share their knowledge of Eating for Health™ to those ready to receive it. Together, we can create a sustainable culture of wellness in our community, one bite at a time.

Program 1: Food Pantry Cooking Demonstrations

We provide low-income members of the community with tasty reasons to accept beautiful free produce that they would typically pass up. If you’re a Food Pantry, pounds and pounds of produce are neglected in favor of less nutrient-dense items at food distribution sites, simply because people don’t know what to do with unfamiliar vegetables. Bauman College’s Food Pantry Cooking Demonstrations address this problem by providing cooking demonstrations and low-cost recipes on location at Pantry sites along with food tastings, useful information and answers to shopping, cooking and nutrition questions.

Program 2: Eating for Healthy Kids

Kids love healthy food when they can get their hands into it! Eating for Healthy Kids inspires kids to dig into Eating for Health™ through fun, interactive nutrition education, food demos and games. The program presents nutrition education and snack demos to school-age children in public and private schools, after-school programs, and community education settings. This program builds upon previous Bauman College pilot programs such as the Kids Culinary Academy to widen children’s exposure to fresh, natural foods and provide families with great bi-lingual recipes. Eating for Health Kids can be tailored to children of differing age ranges and ethnicities. The program is 6-lessons and incorporates a food demonstration, activities and discussion. Bauman College is looking to work with various schools and community partners in 2011-2012.

Bauman College received funding from A Network for a Healthy California for 2011 to provide in-class nutrition education on reducing sugar consumption for elementary age children as part of the ReThink Your Drink campaign. As part of the grant, Bauman College Nutrition Consultants will reach over 900 low-income children in Sonoma County to raise awareness of the hazards of refined and artificial sweeteners.

Program 3: CSA/Farmer's Markets

Kohlrabi…watermelon radishes…and escarole? Oh my! Have you ever gotten one of these especially “unique” ingredients either at your Farmer’s Market or in your CSA (Community Subscription Agriculture) box and then wondered, now what? Bauman College chefs love to share their culinary expertise on how to prepare puzzling new foods and offer Eating for Health™ Recipes to bring these fruits and vegetables to your table in quick and tasty ways. As part of the CSA Program, CSAs and Farm Producers contract with our chefs to produce recipes each month based on feedback from local farmers on what’s ripe and ready to harvest. For Farmer’s Markets, Bauman College collaborates with farmers who provide market-fresh produce at Bauman College cooking demonstrations at the Market. Samples, nutrition tips and recipes are given out on-site for people walking by. Aromatic, colorful, fresh local produce is the basis for seasonal celebratory recipes to inspire personal and community change!

Program 4: Affordable Nutrition for Seniors

This intensive 8-session course covers the practical skills of eating and cooking for health on a budget for senior citizens. Bauman College developed this program for formerly homeless adults living in Transitional Housing and found it to be both well received and of substantial value. Affordable Nutrition focuses on menu planning, food budgeting and making more meals at home from scratch. Participants receive practical nutrition and culinary education, an Affordable Nutrition workbook, and a weekly CSA box of seasonal fruits and vegetables (when available). Each 2.5 hour long class covers an hour of in-depth nutrition topics like portion control, food label reading, and grocery shopping, followed by an intensive cooking lesson and tasting. Bauman College graduates conduct a FoodMaxx grocery store tour, discuss how to cook weekly CSA produce, advise senior citizens on how to stock a pantry with healthy staples, and support participants to make behavior changes to achieve personal lifestyle and health goals.

Affordable Nutrition (formerly Transitional Nutrition) was the first theory-based nutrition education program to document the impact of a holistic dietary system -Eating for Health™ on the dietary and lifestyle behaviors of homeless adults residing in transitional housing. Program statistics for the first 2 pilots (pre-program to post-program): 26% increase in vegetable consumption among participants; 83.3% greater awareness of proper portion control; 50% behavior change regarding proper portion size; 48% more participants regularly choose to include 1 or more ingredients in their meal to enhance the nutritional value; 100% consistently use at least one Eating for Health budgeting/shopping strategies taught in the class. All statistics were compiled using existing USDA tested-questionnaires and reliable testing methods. Note: small sample size may affect data reliability.

Costs and fees for each program will depend upon the program and the number of participants for whom we provide education, food and counseling services. For Food Pantry Cooking Demonstrations, the recipes are designed to be inexpensive, and use only ingredients that low-income residents would have access to. A given demo can cost anywhere from $20-$80, depending on how many people are served. The CSA and Farmer’s Market programs are provided free of cost to local producers, with all food costs for cooking demonstrations provided by the Farmer’s Market. Affordable Nutrition and Eating for Healthy Kids each have separate customizable budgets that are dependent upon the number of kids or senior citizens in each program.
