What is Eating For Health™? Eating For Health™ was designed by Dr. Edward Bauman to provide an alternative to the USDA Food Pyramid model. Eating For Health™ encourages the use of fresh, local, seasonal, organic, natural foods, with an emphasis on fruits and vegetables, nuts and seeds, herbs and spices, whole grains, and legumes with organic dairy, eggs, seafood, and pasture-raised animal foods. Affordable Nutrition Outreach InitiativeIn taking the pulse of our community and that of the nation, people want to eat better, buy more fresh, local, and seasonal food, and spend less money in the process. Affordable Nutrition is a six week, hands- on community nutrition education program, developed and tested by Bauman College, to teach people how to save money and improve their health. With campuses in Penngrove, Berkeley, Santa Cruz, CA, and in Boulder, CO, Bauman College has the capability to train health educators in many areas on how to implement the Affordable Nutrition curriculum in their community. Affordable Nutrition is built around the concept of Eating for Health™ which emphasizes a S.O.U.L. food diet. This meal plan is based on delicious, well balanced meals using seasonal, organic, unrefined, and local foods. Bauman Nutrition Consultants and Natural Chefs have already delivered the Affordable Nutrition program to people living in halfway houses and shelters. This group of people, with very limited resources, have learned how to make meals from the fresh produce, whole grains, legumes, eggs, and canned goods available to them from local food banks and grocery stores. Teaching people to prepare foods from scratch, rather than buying pre-made, costly convenience foods is a joy to behold, with noticeable cost savings and significant health benefits. Affordable Nutrition (formerly Transitional Nutrition) was the first theory-based nutrition education program to document the impact of a holistic dietary system, Eating for Health™, on the dietary and lifestyle behaviors of homeless adults residing in transitional housing. Program statistics for the first 2 pilots (pre-program to post-program): 26% increase in vegetable consumption among participants; 83.3% greater awareness of proper portion control; 50% behavior change regarding proper portion size; 48% more participants regularly choose to include 1 or more ingredients in their meal to enhance the nutritional value; 100% consistently used at least one Eating for Health budgeting/shopping strategies taught in the class. All statistics were compiled using existing USDA tested-questionnaires and reliable testing methods. With your support, we will build partnerships across the nation with food banks, soup kitchens, food pantries, hospitals, and low income and senior housing programs to offer this program to a broad cross section of America. As people join together to make and share meals with families and friends, they create a more holistic community. In teaching people to eat and live well, we can document lower rates of obesity, diabetes, mental illness, cardiovascular disease, and cancer. We need your support to be able to provide these services that promote nutrition and restore health to our communities.
